Peel and grate carrots, apple, beetroot and red cabbage using a grater or a food processor (what makes it much easier!).
Put all in the large salad bowl, add cashews, sesame seeds and drizzle with olive oil, juice of 1 lime or lemon and add salt as per taste. Stir well and enjoy!
