Banana chocolate oatmeal muffins, GF

Serves: 6 muffins
  • 2 ripe medium size bananas
  • 1 egg
  • 3 tbsp maple or agave syrup
  • ⅓ cup coconut oil, melted
  • 1 cup oats
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • 1 tsp baking soda
  • pinch of salt
  • ½ cup dark chocolate, cut in chunks
  • Note: 1 cup = 250 ml
  • If you are using 12 muffins tin pan, just double up the quantities.
  1. Preheat oven to 180 C / 356 F. Prepare 6 muffin tin pan and line with muffin paper cups.
  2. Put all the ingredient except chocolate in your blender / food processor and process until you get smooth and creamy batter.
  3. Add dark chocolate chunks and stir gently.
  4. Pour the batter into prepared muffin cups and bake for about 13 - 15 min or until golden brown.
  5. Leave them to cool and enjoy!
  6. Note: Store them in an airtight container at room temperature or if in the fridge, than remove from the fridge at least 30 min before eating since they will harden when in fridge because of the coconut oil.
