Note: these quantities serve 2-3 people, if you cook for more just double up the quantities.
Preparation
Prepare couscous following instructions on packaging. Normally it's 1 cup of couscous into 1 cup of boiling water, remove from the heat and leave for 5 minutes to absorb all the water.
Note: I always add a tablespoon of olive oil and a pinch of salt to the water.
Prepare tomatoes and cucumbers (peeled first) by cutting them in smaller pieces.
When the couscous is ready, mix it with prepared zucchini, cucumber, tomatoes cubes and corn, drizzle it with more olive oil, season with salt and add some fresh thyme.
Serve and enjoy!
