Peanut butter pancakes
Serves: 12
  • ¾ cup all purpose flour /or GF flour mix
  • ⅓ cup sugar (I used coconut sugar)
  • ¾ tsp cinnamon powder
  • ¼ tsp vanilla extract
  • Pinch of salt
  • 2 tblsp raw peanut butter (or regular)
  • 1 tblsp coconut oil
  • 1 cup milk (or soy, other nut milk)
  • 1 tsp baking powder
  • Note: 1 cup = 250 ml.
  • Makes approx 12 small pancakes.
  1. Mix all ingredients (except baking powder) in a high speed blender until smooth.
  2. Transfer to a small bowl and whisk in baking powder;
  3. Set aside for 5 minute while you prepare your pan or griddle with a little bit of oil (I use coconut oil). Make pancakes until they get golden-brown colour (you flip them on the other side when you see bubbles forming).
  4. Serve with maple syrup and raspberries or topping of your choice. Enjoy!
