Pear & cinnamon baked oatmeal

Ingredients
  • 2.5 cups oats
  • 1 tsp baking powder
  • pinch of salt
  • 2 tsp cinnamon
  • ⅓ tsp nutmeg
  • 2 tsp vanilla
  • 4 tbsp coconut sugar (or raw cane sugar)
  • 1.5 cups milk (I used almond milk)
  • ¼ cup coconut oil, melted
  • 3 large pears, chopped in cubes
  • ½ cup nuts of your choice, chopped (I used Brazil nuts)
  • Topping: coconut sugar
  • Note: 1 cup = 250 ml
Preparation
  1. Preheat oven to 180 C / 356 F.
  2. Prepare a rectangular 24 x 35 cm / 9 x 13 inch baking pan and grease it with oil.
  3. In a large mixing bowl combine oats, baking powder, coconut sugar, cinnamon, nutmeg and salt, stir well.
  4. In another bowl combine milk, melted coconut oil and vanilla and stir.
  5. Add liquid mixture to the oats mixture and stir until it's all well combined.
  6. Add previously chopped pears and nuts and stir.
  7. Transfer mixture into prepared baking pan and bake for about 40 min until golden brown on top.
  8. Cool slightly and serve sprinkled with coconut sugar. Enjoy!
  9. Note: It keeps well in fridge for 2-3 days.
