Preheat oven to 180 C / 356 F. Prepare large baking tray and line it with baking paper.
In a mixing bowl mix flour, baking soda and salt.
In another mixing bowl whisk melted coconut oil with sugar until it's well combined. Add eggs one at a time whisking continuously, than add vanilla extract and cacao.
Add flour mixture into the wet mixture and stir until it's combined.
Add chopped chocolate and stir gently.
Add about 1 tbsp of dough per cookie on the baking tray and leave enough space between as the cookies will spread when in the oven (I baked first 9 cookies and than another 9 after).
Bake 10 minutes and leave them to cool slightly before moving to the cooling wire rack. Cookies will be soft but they will harden a bit once cooled.
Keep in the airtight container.
