Coconut oil cinnamon sugar blondies

Ingredients
  • ½ cup coconut oil, melted
  • ¾ cup light brown sugar (or coconut sugar)
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • ¼ tsp nutmeg (optional)
  • 1 cup all-purpose flour
  • ½ cup spelt flour
  • pinch of salt
  • Topping: 1-2 tbsp sugar + 1 tsp cinnamon
  • Note: 1 cup = 250 ml
Preparation
  1. Preheat oven to 180 C / 350 F. Line a 20x20 cm / 8x8 inch baking dish with baking paper.
  2. Melt the coconut oil over low heat and pour it into a large mixing bowl.
  3. Add sugar, beaten eggs and vanilla and whisk well until all combined.
  4. Add flour, salt and nutmeg and whisk well until you get a thick mixture.
  5. Transfer the batter into the baking dish and spread it evenly.
  6. Combine sugar and cinnamon and sprinkle over the batter.
  7. Bake for 20-25 min or until tester comes out mostly clean. Don't over-bake.
  8. Leave to cool before cutting into squares. Enjoy!
