Vanilla chia pudding & cherry smoothie jar (vegan, GF)

Ingredients
  • For Vanilla chia pudding
  • 2 tbsp chia seeds
  • ½ cup almond milk (or other plant-based milk)
  • 1 tsp vanilla extract
  • 1 tsp maple syrup (or agave)
  • For cherry smoothie
  • ½ cup almond milk (or other plant-based milk)
  • 1 small banana
  • handful of frozen cherries (or sour cherries)
  • 1 tsp acai powder (optional)
  • 1 small piece fresh ginger
  • For toppings: shredded coconut, cacao nibs
  • Note: ½ cup = 125 ml
Preparation
  1. For vanilla chia pudding combine chia seeds with almond milk, vanilla extract and maple syrup, stir well and leave for at least 20 min in the fridge (or overnight).
  2. For cherry smoothie put almond milk, banana, cherries, acai powder and ginger in a blender and blend until it gets smooth and creamy.
  3. To assemble a jar first put a layer of chia pudding, than a layer of cherry smoothie, another thin layer of chia pudding and finish with a smoothie layer.
  4. Decorate with shredded coconut and cacao nibs and enjoy!
