Strawberry banana ice cream (vegan, GF)

  • 2 bananas, previously chopped and frozen
  • 1 cup strawberries, previously frozen
  • 2 tbsp coconut cream (the one from the can of full-fat coconut milk)
  • ½ tsp vanilla extract
  • 1 tbsp maple or agave syrup
  • toppings: goji berries, cacao nibs (optional)
  • Note: 1 cup = 250 ml
  • Make sure your bananas are ripe before chopping and freezing them.
  1. Put all the ingredients in your food processor and mix until you get a smooth and creamy ice cream. You can add a little bit of milk (of your choice) to make it easier to mix and combine.
  2. You can also adjust the sweetness to your taste.
  3. Serve immediately and top with goji berries and cacao nibs (or other topping of your choice).
  4. You can also freeze it for at least 2-3 hours but make sure that after you put it in the plastic container and in the freezer that you stir it few times while in the freezer, this way you will prevent ice crystals to form. Enjoy!
