Vanilla and cinnamon roasted plums (vegan, GF)

  • 8-10 plums, halved and pitted
  • 1-2 tbsp maple syrup
  • 1 vanilla pod (seeds scraped)
  • 2 cinnamon sticks (or 1 tsp ground cinnamon)
  • 4-5 cloves
  • 3-4 tbsp water
  • For serving: coconut yogurt (or other of your choice)
  1. Preheat oven to 200 C / 392 F.
  2. Arrange halved and pitted plums in a baking dish in single layer.
  3. Sprinkle the plums with maple syrup, vanilla seeds, add cinnamon sticks (or ground cinnamon), cloves and 3-4 tbsp water.
  4. Roast until plums get soft, about 20-25 minutes.
  5. Cool slightly and serve with coconut yogurt (or other of your choice).
  6. Drizzle with little bit of maple syrup (optional, if you like sweeter desserts) and enjoy!
