Spelt thumbprint jam cookies

Serves: 28-30 cookies
Ingredients
  • 2 cups spelt flour
  • 1 tsp baking soda
  • pinch of salt
  • 4 heaped (full) tbsp coconut oil, softened
  • 2 large eggs, room temperature
  • ¾ cup coconut sugar (or granulated)
  • 1 tsp vanilla extract
  • 3-4 tbsp jam of your choice, I used cherry jam
  • Note: 1 cup = 240 ml
Preparation
  1. In a mixing bow combine flour, baking soda and salt.
  2. In another mixing bowl whisk softened coconut oil, sugar and vanilla.
  3. Add eggs and whisk well.
  4. Add flour mixture into wet ingredients and stir using a wooden spoon until all is well combined.
  5. Put it in the fridge for 30 min.
  6. Preheat oven to 180 C / 356 F. Line a large baking tray with baking paper.
  7. Take the dough out of the fridge and using your hands make small balls.
  8. Place them on the tray and leave enough space in between as they will spread when baking.
  9. You won't be able to fit them all so you can bake them in two rounds.
  10. Once the dough balls are on the tray use your thumb to make an imprint in each one and fill them with jam.
  11. Bake for 10 min and remove from the oven. They will still be soft but will harden as they cool.
  12. Let the cool before storing in metal bow or airtight container. Enjoy!
