Yogurt sweet fritters
- 400 ml (1½ cups) yogurt (I actually used kefir this time)
- 2 eggs
- grated peel of 1 lemon or orange (untreated)
- 2 sachet vanilla sugar or 1 tsp vanilla extract
- 2 tbsp sugar (I used xylitol)
- pinch of salt
- 20 tbsp all-purpose flour
- 1 sachet (2 tsp) baking powder
- 1 tbsp rakija (grappa)
- 500 ml oil for frying
- Put yogurt, eggs, sugar, vanilla sugar, lemon peel in a large mixing bowl and stir until combined.
- Add flour, baking powder and salt and mix using a whisk until you get a smooth batter.
- Heat the oil in a larger frying pan or saucepan and add about half tbsp of batter per fritter into hot oil.
- Don't put too many at the same time and repeat the process until they are all golden brown.
- Line a plate with kitchen paper towels and transfer fritters onto the paper. Sprinkle them with powdered sugar and enjoy!
