Yogurt sweet fritters

  • 400 ml (1½ cups) yogurt (I actually used kefir this time)
  • 2 eggs
  • grated peel of 1 lemon or orange (untreated)
  • 2 sachet vanilla sugar or 1 tsp vanilla extract
  • 2 tbsp sugar (I used xylitol)
  • pinch of salt
  • 20 tbsp all-purpose flour
  • 1 sachet (2 tsp) baking powder
  • 1 tbsp rakija (grappa)
  • 500 ml oil for frying
  1. Put yogurt, eggs, sugar, vanilla sugar, lemon peel in a large mixing bowl and stir until combined.
  2. Add flour, baking powder and salt and mix using a whisk until you get a smooth batter.
  3. Heat the oil in a larger frying pan or saucepan and add about half tbsp of batter per fritter into hot oil.
  4. Don't put too many at the same time and repeat the process until they are all golden brown.
  5. Line a plate with kitchen paper towels and transfer fritters onto the paper. Sprinkle them with powdered sugar and enjoy!
