Cherry banana ice cream

  • 2 cups (400 g) cherries (pitted and frozen for 6-8 hours)
  • 2 bananas (sliced and frozen for 6-8 hours)
  • 3 tbsp full fat coconut milk (or other milk)
  • 1 tsp vanilla paste (or vanilla extract)
  1. Put all the ingredients in the blender/food processor and blend until thick and smooth, consistency of ice cream. Serve immediately and enjoy!
  2. Note: If your food processor is not very strong, you may need to add a bit more milk to make it easier to blend. If the cherries (or other fruit ) you are using are not very sweet, you can add 1-2 tsp of honey or agave syrup.
  3. This dessert is best eaten immediately after preparation as it melts quickly. It can be put back in the freezer but will become a bit icy due to forming of ice crystals.
