Serves: 10 apple fritters
Ingredients
  • 4 apples, grated (excess water squeezed)
  • 2 eggs
  • ½ cup spelt flour (or buckwheat flour for GF version)
  • 1 tbsp coconut sugar (or raw cane sugar)
  • 2-3 tbsp almond milk (or other milk)
  • ½ tsp cinnamon
  • coconut oil for frying
  • Note: 1 cup = 250 ml
Preparation
  1. In a large mixing bowl combine eggs, sugar, flour, milk and cinnamon and stir until comes together.
  2. Add grated apples (previously squeeze the excess water) and stir all to combine.
  3. Heat coconut oil in a pan over medium heat and take a spoon of batter for each fritter. Fry for few minutes on each side until golden brown.
  4. Drizzle with maple syrup and enjoy!
