In a large mixing bowl combine maple syrup, cacao, ground almonds and vanilla, stir with a wooden spoon until well combined.
Add melted coconut oil and stir by hand until all ingredients are combined.
Add a handful of goji berries and dried cranberries and stir in.
Prepare silicone muffin tin ( or a regular one lined with paper liners) and put about 2 tbsp of chocolate mixture into each cup. You can top each one with few goji berries if you wish.
Put them in the freezer to set for about 2 hours.
Remove from freezer and take out the chocolate fudge out of the muffin cups, cut in smaller pieces, put in a food container and store in fridge.
Note: it can stay in the fridge for a long time but you'll probably eat it before that!
