Almonds & cranberries homemade granola

Ingredients
  • 4 cups oats
  • 1 cup almonds, chopped
  • 2 tbsp pumpkin seeds
  • 4 tbsp coconut oil, melted
  • 4 tbsp maple syrup (or honey)
  • ½ cup dried cranberries
  • pinch of salt
  • ½ tsp cinnamon
  • 1 tsp vanilla extract
Preparation
  1. Preheat oven to 175 C (350 F).
  2. Prepare a large baking tray and line it with parchment paper.
  3. In a small pan melt the coconut oil and maple syrup over low heat, set aside.
  4. In a large mixing bowl combine oats, chopped almonds, pumpkin seeds. Add salt, cinnamon and vanilla and stir well. Pour coconut oil & maple syrup over the oats mixture and stir to combine.
  5. Spread the mixture into the tray and bake for 25 minutes. (After 10 min and 20 min of baking time remove from the oven to stir.)
  6. When granola is baked and it's light golden color, remove it from the oven and stir in dried cranberries. Set aside to cool completely.
  7. Keep it in airtight container / glass jars for up to 2 weeks.
