Guacamole (avocado dip)

Serves: 1 small bowl
Ingredients
  • 3 ripe avocados, mashed
  • 10-15 cherry tomatoes
  • juice from 1 lemon
  • small bunch of fresh coriander, finely chopped
  • salt & pepper
  • 1 clove garlic or ½ small red onion, finely chopped (optional)
  • Note: I make it more mild as I don't eat garlic and onions now but feel free to adjust to your taste.
Preparation
  1. Remove the stone from avocados and scoop the flesh into a mixing bowl. Squeeze the lemon juice on the avocado flesh and mash it using a fork until it's creamy.
  2. Cut the cherry tomatoes in half (or smaller if they are larger) and chop finely the coriander and garlic or onion if using.
  3. Add them to the mashed avocado, season with salt and pepper per your taste and just combine all together using a spoon. Serve with some fresh coriander and enjoy!
  4. Note: Using lemon (or lime) juice is very important here because otherwise your guacamole will soon turn ugly brown color (because of oxidation process). That's why I, before putting the leftovers in the fridge and cover it with plastic foil, sprinkle a bit more fresh lemon juice on top to prevent it turning brown.
