Summer vegetarian couscous

Ingredients
  • 1 cup couscous
  • 1 cup water
  • 1 tbsp olive oil
  • salt
  • 1 large zucchini
  • ½ cucumber
  • ½ cup corn
  • 7-8 cherry tomatoes
  • olive oil, salt, thyme
  • Note: these quantities serve 2-3 people, if you cook for more just double up the quantities.
Preparation
  1. Prepare couscous following instructions on packaging. Normally it's 1 cup of couscous into 1 cup of boiling water, remove from the heat and leave for 5 minutes to absorb all the water.
  2. Note: I always add a tablespoon of olive oil and a pinch of salt to the water.
  3. In the meantime cut one zucchini into small cubes, sprinkle with salt and sauté it on some olive oil until it softens a bit. Leave on the side.
  4. Prepare tomatoes and cucumbers (peeled first) by cutting them in smaller pieces.
  5. When the couscous is ready, mix it with prepared zucchini, cucumber, tomatoes cubes and corn, drizzle it with more olive oil, season with salt and add some fresh thyme.
  6. Serve and enjoy!
