Serves: 12
Ingredients
¾ cup all purpose flour /or GF flour mix
⅓ cup sugar (I used coconut sugar)
¾ tsp cinnamon powder
¼ tsp vanilla extract
Pinch of salt
2 tblsp raw peanut butter (or regular)
1 tblsp coconut oil
1 cup milk (or soy, other nut milk)
1 tsp baking powder
Note: 1 cup = 250 ml.
Makes approx 12 small pancakes.
Preparation
Mix all ingredients (except baking powder) in a high speed blender until smooth.
Transfer to a small bowl and whisk in baking powder;
Set aside for 5 minute while you prepare your pan or griddle with a little bit of oil (I use coconut oil). Make pancakes until they get golden-brown colour (you flip them on the other side when you see bubbles forming).
Serve with maple syrup and raspberries or topping of your choice. Enjoy!
