Peanut butter and raspberry chia jam parfaits (vegan, GF)

  • ¾ cup (200 ml) firm yogurt (I used soya yogurt)
  • 1 cup (125 g) raspberries, frozen or fresh
  • 1 tbsp maple syrup
  • 1 tbsp water
  • 1 tbsp chia seeds
  • ½ tsp vanilla extract
  • 4 tbsp peanut butter (no added sugar, oil and salt)
  • Topping: cacao nibs
  • Note: 1 cup = 240 ml
  1. Combine raspberries, maple syrup, water, chia seeds and vanilla in a small pan and let it cook over low heat stirring occasionally.
  2. In about 10 minutes remove from the heat and let it cool.
  3. Prepare serving glasses and put a layer of yogurt, layer of raspberry chia jam and a thin layer of peanut butter.
  4. Repeat one more time and sprinkle cacao nibs on top of the peanut butter layer.
  5. Serve parfaits cold or at room temperature. Enjoy!
