Good morning and happy Monday dear people! How was your weekend, did you do anything interesting? I spent Saturday outside enjoying the warm summer weather in Zagreb with my friends and just having a really calm and relaxing day, the kind of day I needed after spending a lot of time inside of the apartment unpacking the boxes and organizing all the stuff. If you ever moved houses, than you know how important is to pay attention to where you actually put what because once you put it, it normally stay there forever (or in my case for a year or two until the next move!)! So if you don’t want your pots and pans next to the cosmetic items or your shoes close to your cookbooks, than you need some time thinking about WHERE to put every single item you unwrap from those boxes! Ugh not the most exciting thing to do definitely but it has to be done…
I have to say it feels good to finally have my kitchen equipment all set up and all the books and framed photographs on the shelves. I still have another few days of work but we are getting there and soon what was just an empty apartment will look more like a home. Even if a temporary one.
Just recently I spoke to somebody I know and this person asked why do I even bother unpacking everything and wouldn’t it be easier to just unpack the basic things and to leave the rest in the boxes since I don’t know how long we will be here anyway. Oh no, it doesn’t work like that! At least not in my book! No matter how long you are staying somewhere, it’s so important to make it comfortable and cozy and your own, basically your home. I refuse to do it any other way even if it is a lot of work and stressful but this life is too short to always be waiting for something rather than just be living in this very moment. And that is exactly what I’m trying to do every single day, remind myself to enjoy the little things without waiting for those big ones to happen because you might spend your whole life just waiting for something that may or may not come…
Let’s go back to today’s recipe, guys it’s so good and I’m so excited about this one! This smoothie taste like a really decadent dessert while in fact it’s good for you and full of healthy ingredients that together make the most creamiest, chocolaty smoothie I ever tasted!
This one is for all you dark chocolate lovers and it goes so well with cherries so if they are in season there where you are , get some and you’ll see what I’m talking about! You can make this for breakfast but you can also easily make it for dessert, it’s kind of perfect for a summer treat when it’s too hot to bake and you still want something delicious and chocolaty. 🙂
- 1 cup coconut milk, canned
- 1 small banana
- 1 tbsp almond butter (or cashew butter)
- 1 tbsp raw cacao powder
- 1 tbsp oats
- 1 tbsp coconut flakes (or shredded coconut)
- 1 tsp acai powder (optional)
- ½ tsp cinnamon
- For topping: cherries, dark chocolate, cacao nibs, coconut flakes
- Put all the ingredients in blender and blend until it's smooth and creamy. Taste and if you like it sweeter, you can add a little bit of maple or agave syrup but I find it perfect as it is.
- Serve in glasses or jars and top with fresh cherries, dark chocolate, cacao nibs and coconut flakes. Enjoy!
