Almond cinnamon Christmas cookies stars (GF, vegan)

It’s two weeks until Christmas and this is the time we all start to bake cookies or look through the recipes to decide which ones we are going to bake for these festive days ahead. I’m sure many of you already have your favourite and I have mine too (you can see some of my favourites here on the blog under Recipes/Christmas) but it’s always nice to change things up a bit and try some new recipes. That’s why I have two new cookies recipes to share with you this week yaaay! 🙂


This first one that I’m sharing today I actually created for a very popular gluten-free Croatian blog “Zdravo i slasno bez glutena”. Sweet Helena contacted me a while ago asking if I would be willing to create a recipe for Christmas cookies without gluten, eggs, refined sugar and dairy and of course I said yes! These delicious cookies with a rich aroma of almonds, orange, cinnamon & vanilla are great for anybody with dietary restrictions and intolerances but also for anybody who wants to try something a bit different and without some of those ingredients most of the people usually use when baking for Christmas. These may be healthy but they are also very delicious and have all those lovely flavours we want in a Christmas cookie so I hope you’ll give them a try!

Almond cinnamon Christmas cookies (GF, vegan)

Recipe type: Cookies / GF
Serves: about 25 cookies
Ingredients
  • 1 cup ground almonds
  • 1 cup coconut flour (not desiccated coconut but real flour)
  • ½ cup coconut sugar
  • ¾ cup coconut oil, melted
  • 1 chia 'egg' (1 tbsp ground chia seeds + 3 tbsp water)
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 tsp grated orange zest (organic)
  • pinch of salt
  • Note: 1 cup = 250 ml
  • If you don't have ground chia seeds, you can use whole seeds too to make chia 'egg'.
Preparation
  1. Start by making chia 'egg' combining 1 tbsp ground chia seeds with 3 tbsp water and leave on the side for 10 minutes.
  2. In a large mixing bowl combine ground almonds with coconut flour, coconut sugar, cinnamon and salt. Mix in chia 'egg', vanilla, maple syrup, orange zest and melted coconut oil.
  3. Stir well so it's all well combined.
  4. Preheat oven to 175 C / 350 F.
  5. Roll out the dough between to plastic foils and make sure you don't roll it out too thin as it will get crumbly. If it gets crumbly, you can add a little bit of water to keep it together. Using star cookie cutter cut out cookies making sure they are not too thin, they should be at least 0.5 cm (0.2 inch) thick.
  6. Prepare large baking tray and line it with baking paper. Transfer cookies to the baking tray and bake them for 8-10 minutes or until they start to get golden brown around the edges.
  7. Leave them to cool and sprinkle with powdered xylitol or regular powdered sugar.
  8. Keep in airtight container or metal cookie box. Enjoy!

Serves: 25 keksa
Ingredients
  • SASTOJCI
  • 1 šalica mljevenih badema
  • 1 šalica kokosovog brašna
  • ½ šalice kokosovog šećera
  • ¾ šalice rastopljenog kokosovog ulja
  • 1 chia jaje (1 žlica mljevenih sjemenki pomiješanih sa 3 žlice vode)
  • 2 žlice javorovog sirupa
  • 1 žličica cimeta
  • 1 žličica vanilin ekstrakta
  • 1 žličica naribane neprskane limunove korice
  • za posipanje: secer u prahu ili brezin secer (ksilitol)
  • Napomena: 1 salica = 250 ml
Preparation
  1. PRIPREMA
  2. Najprije pripremite chia ‘jaje’ tako što ćete pomiješati 1 žlicu mljevenih chia sjemenki i 3 žlice vode i staviti sastrane da se napravi gelasta smjesa.
  3. U većoj posudi pomiješajte mljevene bademe, kokosovo brašno, kokosov šećer, cimet i sol.
  4. Dodajte chia ‘jaje’, javorov sirup, vanilin ekstrakt i rastopljeno kokosovo ulje te naribanu koricu naranče.
  5. Pomiješajte sve sastojke u vašem blenderu ili ručno dok se dobro ne povežu i dobijete tijesto. Ugrijati pećnicu na 175 C i obložiti pleh papirom za pečenje.
  6. Izmedju dvije prozirne folije izvaljati tijesto, ali ne pretanko tako da ni keksi ne budu previše tanki, neka budu debljine otprilike 0.5 cm.
  7. Koristeci kalupe izradite zvjezdice i lagano prebacite kekse na pleh za pečenje.
  8. Pecite 8-10 min i izvadite ćim pocnu dobivati boju, nemojte ih prepeći.
  9. Pustite da se ohlade i pospite secerom u prahu ili brezinim šećerom (ksilitolom).Dobar tek!

After three weeks in Dubrovnik, the time has come After three weeks in Dubrovnik, the time has come for me to return to Zagreb. Besides the pandemic reality, in these weeks we had horrible earthquake in Croatia that took lives, destroyed homes and left the whole country in the state of shock. On a personal level we had to face death in the family due to Covid and if somebody tells me ever again that 'they would have died anyway because they were old" I will really lose it!! My little niece and nephew lost their grandmother and we all lost a person we loved. So, it was and still is a difficult time but life taught me many times before that we are stronger than we think and that the most important thing is to find peace within yourself. I still wake up every morning grateful for life, for my people, for photography, for all the little things that make life beautiful. And I dream about all the good things that will come our way...

I know it's not the most colourful and bright phot I know it's not the most colourful and bright photo for this occasion but it represents what this year has been like for me personally. Difficult, lonely, at times very dark but at the same time with its sweet moments that I get to keep forever in my heart, beauty found in 'ordinary' and sparkles of light that give hope and comfort. My favourite moments in these last two days since My favourite moments in these last two days since I came to Dubrovnik are baking ‘orahnjaca’ (Croatian) or ‘potica’ (Slovenian), traditional walnut cake with my mum, harvesting mandarins in our garden with my dad, soaking up the sun that I missed so much after about a month of dark and gloomy days, reading a book on the terrace and stopping every few moments to just look at the sea... All the little things that bring me much needed calm and joy. Hope you are all well and finding your little moments too...☺️❤️

Story behind this image: because of all the festive photos on social media these days, I felt pressured to create some in Christmas mood too. But nothing was going as I imagined and I simply was not feeling it. So I decided to put all that away and create something that reflects more of me and what and how I feel at the moment.
