How was your weekend? I had a beautiful Saturday and spent most of my day outside enjoying the nature and gorgeous sunny weather in the mountains. The weather is actually too good as we really need some snow! This is a ski destination and tourists are not happy that we’ve been having this weather more appropriate for April than December. To be honest, I also want everything to be white and covered with snow, that’s how pre-Christmas and Christmas should be in the Alps! I will also have my family visiting from Croatia and I really, really want for them to experience the white Christmas, it’s kind of magical and fills your soul with peace. Mine at least! Ah that global warming, hopefully the snow will come soon…
And than my Sunday I spent all day working, baking and shooting Christmas cookies so stay tuned as those are making appearance soon! 🙂 Let me tell you straight away that those will be ‘real’ festive cookies, meaning with butter and sugar involved but Christmas is only once per year and we cannot eat healthy ALL the time, right? 😉 This month I’m mixing it up a bit here on the blog, as you know that most of the recipes I post are in the healthier category but you know that I also love my treats. It’s all about the balance and finding what works for you and your body.
So before we get to that butter-sugar part of the month, let’s have this healthy, sweet and so delicious chocolate mousse that is made with dates and entirely vegan, gluten and dairy-free.
Looks good, right? well, it tastes even better and you only need few ingredients to make this chocolate mousse. I bet nobody will know that it’s kind of healthy! 🙂
- 1 cup creamy coconut milk (the one in the can, keep in the fridge before using)
- 5-6 Medjool dates
- 2 tbsp raw cacao
- 1 tsp vanilla extract
- pinch of salt
- Note: 1 cup = 250 ml; if you are using regular dried dates, make sure you soak them in warm water for 30 min before using.
- Put all the ingredients in your blender / food processor and blend until it gets creamy and well combined.
- Keep in the fridge and top with some coconut cream and blueberries or raspberries (fresh or frozen) before serving. Enjoy!
