Coconut oil chocolate cookies

Do you find yourself craving chocolate (I mean more than usual haha!) when the days become cooler, dark and gloomy? Well, I definitely do! But at least I eat dark chocolate and when I make chocolate cookies they are usually made with 65% or 70% cacao and cacao is considered to be a rich source of antioxidants so in my opinion it’s almost like a medicine that makes you feel good! Since I also don’t use refined sugar but coconut sugar and instead of butter I use coconut oil, we can almost say that these cookies are good for you! In moderation of course! 😀 Anyway, joking aside, I believe balance is so important and if we eat healthy most of the time and consume plenty vegetables, fruit, legumes, seeds, healthy fats, fish, some high quality meat (in my case only occasionally), than of course we should never feel bad for having that cookie or two from time to time with our coffee or tea. Specially if we try to make them with a bit healthier ingredients…

Before I changed the way I eat about 2 and half years ago I used to buy cookies all the time and always had few varieties at any time somewhere in my cupboards so when the cravings would strike, all I had to do was open the box. Now I am much more aware of what I put in my body and I don’t buy cookies anymore, that doesn’t mean however that I don’t like them anymore! I just bake them myself and this way I can control what I put inside and how sweet they are. I really can’t eat cookies or any other desserts that are too sweet and where all you can taste is that sugar, no, that’s definitely not for me anymore. If I eat apple or pear cake I want to taste that natural sweetness of apples or pears and  the flavours that are in there like cinnamon, vanilla, nutmeg or cardamom. If I eat chocolate cookies or cakes, than I want to use high quality dark chocolate and enjoy its taste. If you are trying to reduce your sugar intake, try baking more with natural sweeteners like coconut sugar, agave or maple syrup, honey or at least try to replace part of the sugar with these alternatives. For most of the recipes you can also reduce the quantity of sugar without compromising the flavour. Serves: 16-18 cookies
Ingredients
  • 1 cup spelt flour
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • pinch of salt
  • 1 cup coconut oil, melted
  • ¾ cup coconut sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tbsp raw cacao powder
  • ½ cup dark chocolate, chopped
  • Note: 1 cup = 250 ml
Preparation
  1. Preheat oven to 180 C / 356 F. Prepare large baking tray and line it with baking paper.
  2. In a mixing bowl mix flour, baking soda and salt.
  3. In another mixing bowl whisk melted coconut oil with sugar until it's well combined. Add eggs one at a time whisking continuously, than add vanilla extract and cacao.
  4. Add flour mixture into the wet mixture and stir until it's combined.
  5. Add chopped chocolate and stir gently.
  6. Add about 1 tbsp of dough per cookie on the baking tray and leave enough space between as the cookies will spread when in the oven (I baked first 9 cookies and than another 9 after).
  7. Bake 10 minutes and leave them to cool slightly before moving to the cooling wire rack. Cookies will be soft but they will harden a bit once cooled.
  8. Keep in the airtight container.

Ingredients
  • SASTOJCI
  • 1 salica pirovog brasna
  • 1 salica obicnog bijelog brasna
  • 1 zlicica sode bikarbone
  • prstohvat soli
  • 1 salica kokosovog ulja, rastopljenog
  • ¾ salice kokosovog secera (ili smedjeg secera)
  • 2 jaja
  • 1 zlicica vanilin ekstrakta
  • 1 zlica sirovog kakao praha
  • ½ salice tamne cokolade, nasjeckane
  • Napomena: 1 salica = 250 ml
Preparation
  1. PRIPREMA
  2. Zagrijati pecnicu na 180 C.
  3. Pripremiti veliki pleh (tepsiju) i obloziti papirom za pecenje.
  4. U vecoj zdjeli pomijesati brasno, sodu bikarbonu i sol.
  5. U drugoj zdjeli pomijesati rastopljeno kokosovo ulje sa secerom dok se dobro ne poveze.
  6. Dodati jedno po jedno jaje mijesajuci i potom dodati jos kakao i vanilin ekstrakt.
  7. Dodati smjesu sa brasnom u mokru smjesu i mijesati dok se sve dobro ne poveze.
  8. Dodati isjeckanu cokoladu i lagano promijesati.
  9. Stavljati otprilike jednu zlicu smjese oblikovane u kuglicu na pleh i ostaviti dovoljno mjesta izmedju jer ce se keksi rasiriti pri pecenju.
  10. Peci 10 minuta, izvaditi iz pecnice i ostaviti da se ohlade. Keksi ce pri vadjenju iz pecnice biti vrlo mekani, ali ce se hladjenjem stvrdnuti. Drzati u zatvorenoj kutiji za kekse.

Ever tried bobići (or favete)? These little balls Ever tried bobići (or favete)? These little balls of sweetness are a true Dalmatian delight, especially around All Saints’ Day. 🍬
In Split, they’re called bobići, while in Šibenik, you’ll hear favete — but whatever the name, they’re closest to the Italian fave dei morti cookies. Made from almonds, egg whites, sugar, a dash of Maraschino, and a hint of lemon zest, they’re baked to soft, golden perfection. Perfect with a cup of coffee or even a little rakija to balance the sweetness!

Every summer I’m on the vacation in Dubrovnik, m Every summer I’m on the vacation in Dubrovnik, my hometown, at least one morning I get up really early, before the sunrise so I can take photos while most people are still asleep.
