I simply cannot believe that it’s been a full month since my last blog post!! But than again if I think how much I had going on in the last two months, it makes sense that unfortunately I didn’t have that much time for the blog. The most important project I’ve been working on was my first ever Food Photography workshop that I organized together with my friend and colleague Natalie from Natalie’s Happy Health blog here in Zagreb, Croatia! We combined our knowledge and experience so I was in charge for the creative part of the workshop about food photography and styling and Natalie was teaching about blogging, creating content for web, social media and a lot of other useful technical stuff! We had amazing attendees from all around the country and we made sure to give them as much as possible in terms of knowledge but also a great experience. We are sure that this is something we want to continue and who knows, maybe even start doing these kind of workshops in English so everybody who is interested could attend, so excited for everything that is yet to come… 🙂 More on all that in another post as I’m planning a post where I’ll share photos from the workshop and more details about how the day went by. Today I wanted to share with you this quick and easy recipe for Blueberry jam oatmeal bars! They are naturally vegan and made with wholesome healthy ingredients that you probably already have in your pantry (and if you don’t, go get them!). The inspiration for these came from my Raspberry oats bars (vegan) that are one of the readers’ (and mine!) favourite recipe on the blog, they are just so simple and amazning, you have to try them out! Now that warmer (read: way too hot for April) days are here, I’m craving all the berries and simple desserts like banana ice creams (like this creamy Strawberry banana ice cream) and slightly sweet fruit bars like these ones. They are great for breakfast too with a glass of cold milk of your choice (mine is oat or almond!) but also as a simple dessert when you need that little something but don’t want to over-indulge in something too rich and heavy.
These yummy bars are sweetened with coconut sugar and I used no added sugar blueberry jam so they are entirely refined sugar-free but if you use regular blueberry jam, it’s totally fine too. Recipe in English:
- 1 cup spelt flour (or wholewheat)
- 1 cup rolled oats
- ½ cup coconut sugar
- ½ tsp cinnamon
- ½ tsp baking soda
- pinch of salt
- ½ cup coconut oil, melted
- 1 smaller jar of blueberry jam (I used no added sugar jam)
- Note: 1 cup = 250 ml
- These quantities are for 20 x 20 cm / 8 x 8 inch baking pan. If you want to bake bigger quantity just double up all the ingredients and bake in a larger rectangular baking pan.
- Preheat oven to 175 C / 350 F.
- Line a 20 x 20 cm / 8 x 8 inch square baking pan with parchment paper (not necessary if you use non stick silicone baking pan).
- In a mixing bowl whisk flour, oats, sugar, cinnamon, baking soda and salt.
- Then add melted coconut oil and mix well. Take ⅔ rd of oats mixture and press it into baking dish using your fingers.
- Spread the blueberry jam over the oats mixture and finally sprinkle the rest of the mixture on top.
- Bake for about 35 min or until golden brown. Allow to cool before cutting into squares. Enjoy!
- Note: the bars keep well on the room temperature in the airtight container if it's not too hot. If you keep them in the fridge, they will harden as coconut oil hardens in the fridge so remove them to room temperature about 20 min before serving.
- If you want to make bigger quantity, just double the ingredients and bake in a larger rectangular baking dish.
Recipe in Croatian / Recept na hrvatskom:
- SASTOJCI
- 1 salica pirovog brasna (ili integralnog)
- 1 salica vecih zobenih pahuljica
- 1/ 2 salice kokosovog secera (ili drugi po vasem izboru)
- ½ zlicice cimeta
- ½ zlicice soda bikarbone
- prstohvat soli
- ½ salice kokosovog ulja, otopljenog
- 1 manja staklenka dzema od borovnica (ja sam koristila bez dodanog secera)
- Napomena: 1 salica = 250 ml
- Ako zelite vecu kolicinu, samo poduplajte sve sastojke i pecite u vecem kalupu.
- PRIPREMA
- Zagrijte pecnicu na 175 C.
- Oblozite kalup velicine 20 x 20 cm papirom za pecenje (nije potrebno ako koristite silkonski kalup).
- U vecoj zdjeli izmijesajte brasno, zobene pahuljice, secer, cimet, soda bikarbonu i sol.
- Zatim dodajte otopljeno kokosovo ulje i promijesajte.
- Uzmite ⅔ smjese i prstima pritisnite u pripremljeni kalup.
- Rasporedite dzem od borovnica preko cijele povrsine i na kraju posipajte s ostatkom smjese od zobenih pahuljica.
- Pecite 35 minuta ili dok ne dobiju zlatno-smedju boju. Dobro ohladite prije rezanja na kocke. Dobar tek!
- Napomena: Kocke se mogu drzati u zatvorenoj kutiji na sobnoj temperaturi ukoliko nije vruce. Ako se drze u frizideru, postanu malo tvrdje jer se kokosovo ulje stvrdne pa ih izvadite 20-ak minuta prije serviranja.
- Ako zelite vecu kolicinu, samo poduplajte sve sastojke i pecite u vecem kalupu.
