The Spring has finally arrived here in the Swiss Alps! We still had heavy snow just a few days ago but the last two days the sun is shining, the birds are singing and snow is melting rapidly, yaaay! Don’t get me wrong, I LOVE snow and have enjoyed my fairytale winter here in the mountains but now is enough and my body and soul are asking for warmth and sunshine. I am so excited to see this beautiful nature without its white cover and all nice green and pretty!
Today I’m sharing one of my favorite quick and super easy to make meals. This Salmon avocado egg sandwich is sooooo delicious and so good for you! Full of protein and those healthy fats that our body needs. Here you can read all about the benefits of avocado.
So this couldn’t be easier, all you need are these ingredients (quantities depend for how many people you are making it):
bread (preferably rye bread or some other whole-wheat bread, good quality smoked salmon, eggs, avocado, lemon, salt and dill. You also might be interested in this delicious Chicken avocado salad on toast…
Preparation: First you slightly toast your sliced bread in the oven so it gets nice and crispy. Smash avocado using fork and add few drops of freshly squeezed lemon juice and a pinch of salt. In a frying pan prepare the eggs in a way you prefer (I love scrambled!) and layer the sandwich, first bread, than smashed avocado, salmon and last eggs. Sprinkle with a bit of fresh dill for more flavor and enjoy!
