So sorry I’ve been quiet here on the blog for the last 2 weeks but I had a good reason for it! It’s called ‘family time’! 🙂 When you live abroad and don’t get to see your family that often, you appreciate that much more every time you have a chance to be together and make sweet memories. And we did make some good ones these holidays… First I had my parents visiting for a week and after that my sister with her family for about 10 days so it was really fun to show them where I live and how beautiful Swiss Alps are. When my parents were here it seemed more like it’s a spring than winter as there wasn’t any snow and we definitely didn’t have a white Christmas this year but it was still beautiful. When my sister with family was here, they had a bit more luck as after New Year finally started to snow and we got that white beauty we were waiting for. And I got a lot of sleighing time with my little niece yaaaay! I don’t know who was more excited, me or an ‘almost 5-year old’! 😀
How was your holidays? I hope you got some rest, fun and good family time! And some good food too of course! Talking about food, since there were quite a few cookies and other treats in December, I thought to start the blog posting this year with something delicious, pretty and healthy. A pink smoothie! 🙂
We need to get back on track (well, I do anyway!) and now it’s time to put that sugar and butter away and go back to healthier, ‘better for us’ ingredients, there will still be great food and treats of course (otherwise, what’s the point?!). I would love to hear what would you like to see more on the blog this year, healthier sweet treat or savory lunch ideas or easy to make cakes or healthy snacking recipes or something else? Today’s recipe is quick and easy, you only need few ingredients, few minutes of your time and a blender. It’s perfect for breakfast and I like the idea of eating something so pretty to start your day. I topped mine with coconut and cashew butter but you can always use what you have at home, like almonds or other nuts and any other nut butter or even drizzled with a bit of honey.
- 1 cup frozen raspberries
- 1 small banana (frozen or fresh)
- 1 tbsp chia seeds
- 1 tsp acai powder (optional)
- ¼ tsp cinnamon
- 1-2 tsp agave syrup or honey
- 1 cup almond milk (or other milk)
- 1 tbsp cashew butter (or other nut butter)
- For serving: cashew butter + coconut flakes (or other nut butter or honey, almonds or other nuts)
- Note: 1 cup = 200 ml
- Put all the ingredients in blender and blend until smooth and creamy. Serve immediately and drizzle with more cashew butter and coconut flakes. Enjoy!
