Coconut oil peach crumble (vegan)

Hello from sunny Dubrovnik! Those of you who follow me on Facebook and Instagram already saw that I arrived few days ago and now enjoying the sea, the sun and my family.

World has been such a crazy place lately and it seems that every morning we wake up to some horrible news waiting for us. That’s why I really really needed this time around my family and friends and in my hometown where I feel safe and somehow protected from everything bad in this world of ours. But let’s not think about all that and focus on the positive! The little things that make every day a bit better and happier! Like this delicious and healthy Peach crumble that is such a yummy little treat on these hot summer days.

Summer fruit makes everything better…

I am obsessed with summer fruit this year and I can’t have enough of it! If you follow my blog, you kind of got that idea already I think. Just remember that delicious, juicy Strawberry cake (here) or those yummy, chocolaty Cherries & chocolate blondies (here) or that Apricot millet vanilla pudding (here)! And now is time for peaches, sweet juicy peaches that make everything better, at least in my world ha ha. 😀

Crumble is one of those easy simple recipes that everybody likes, normally it’s made with butter but I made mine with coconut oil and coconut sugar and it’s equally delicious but just a little bit better for us. You can use any sugar you want of course but if you are using peaches that are quite sweet and juicy, you will be just fine with using coconut sugar that is less sweet than regular cane sugar. But that’s up to you of course, no judging here, food is made to be enjoyed and not to feel guilty about! 🙂

Oh and I have to mention that combination of peaches, vanilla, cinnamon and coconut sugar smells and taste amazing! I hope you’ll give this recipe a try and let me know what you think! In the recipe I used smaller 20 x 20 cm (8 x 8 inch) baking pan but I made this crumble again yesterday for my family here so I used a larger rectangular baking pan so I just doubled up the quantities and it turned out great! 🙂

Serves: 6-8
Ingredients
  • For fruit layer
  • 5 peaches, sliced
  • 2 tbsp coconut sugar (or other sugar)
  • ½ tsp cinnamon
  • 1 tsp vanilla extract
  • 2 tbsp water
  • For crumble layer
  • 1 cup spelt or whole wheat flour
  • 1½ cup oats
  • ½ cup coconut oil, melted
  • 1 tsp cinnamon
  • ½ cup coconut sugar
  • pinch of salt
  • Note: 1 cup = 250 ml
  • These quantities are for 20 x 20 cm (8 x 8 inch) baking pan. If using larger pan, just double up the quantities.
Preparation
  1. Preheat oven to 200 C / 350 F.
  2. Prepare baking pan and line it with baking paper (not necessary if using silicone pan).
  3. In a large mixing bowl combine all ingredients for fruit layer (sliced peaches, coconut sugar, cinnamon, vanilla and water) and stir using a wooden spoon.
  4. Place in a prepared baking pan.
  5. Prepare crumble layer by adding all the crumble ingredients (flour, oats coconut oil, cinnamon, coconut sugar and salt) in a large mixing bowl and stir well until it's all combined.
  6. Add crumble on top of the peaches.
  7. Press gently with a spoon to flatten.
  8. Bake for 30 min until golden brown.
  9. Leave to cool and serve warm or cold with some vanilla ice cream, cream, yogurt or milk.

    Crisps and crumbles are my all time favorite dessert, and this peach version looks spectacular! I made a similar one yesterday with peaches, plums and nectarines and it’s already gone. I think another one, your version, is in order soon. I hope your settling in well to Dubrovnik – so beautiful!

      Thank you dear Rachel! Your one sounds amazing, I love all your recipes and your photos always make me drool! 😀 Dubrovnik is my hometown so I’m here for the summer holidays but I moved temporary to Zagreb, our capital and I’m slowly settling…until next move! 🙂

After three weeks in Dubrovnik, the time has come After three weeks in Dubrovnik, the time has come for me to return to Zagreb. Besides the pandemic reality, in these weeks we had horrible earthquake in Croatia that took lives, destroyed homes and left the whole country in the state of shock. On a personal level we had to face death in the family due to Covid and if somebody tells me ever again that 'they would have died anyway because they were old" I will really lose it!! My little niece and nephew lost their grandmother and we all lost a person we loved. So, it was and still is a difficult time but life taught me many times before that we are stronger than we think and that the most important thing is to find peace within yourself. I still wake up every morning grateful for life, for my people, for photography, for all the little things that make life beautiful. And I dream about all the good things that will come our way...

I know it's not the most colourful and bright phot I know it's not the most colourful and bright photo for this occasion but it represents what this year has been like for me personally. Difficult, lonely, at times very dark but at the same time with its sweet moments that I get to keep forever in my heart, beauty found in 'ordinary' and sparkles of light that give hope and comfort. My favourite moments in these last two days since My favourite moments in these last two days since I came to Dubrovnik are baking ‘orahnjaca’ (Croatian) or ‘potica’ (Slovenian), traditional walnut cake with my mum, harvesting mandarins in our garden with my dad, soaking up the sun that I missed so much after about a month of dark and gloomy days, reading a book on the terrace and stopping every few moments to just look at the sea... All the little things that bring me much needed calm and joy. Hope you are all well and finding your little moments too...☺️❤️

Comfort food is just the best! I have few that ins Comfort food is just the best! I have few that instantly make me feel better like semolina porridge or spaghetti with fresh tomatoes and basil... Story behind this image: because of all the festive photos on social media these days, I felt pressured to create some in Christmas mood too. But nothing was going as I imagined and I simply was not feeling it. So I decided to put all that away and create something that reflects more of me and what and how I feel at the moment. So this is one of the images from that series. In the end what matters the most is that we create from our heart.✨
